Fish tacos

Tonights dinner was ready in 15 minutes. Scott reminded me he had a double header softball game tonight and wanted to eat before he had to play. So being the amazingly wonderful wife that I am I threw together this wonderful dinner. Not only was it quick and easy but also nutritious.
In a saucepan I heated up a can of black beans and some frozen corn. I took 2 tilapia filets drizzled a small amount of olive oil on the fish and then sprinkled half a pack of taco seasoning. My wonderful grill master grilled the fish for us. We had fresh chopped tomatoes, romaine lettuce, cheese, salsa, and fish wrapped in a whole wheat tortilla.
This is defiantly a must try dinner.

Happy Mother's Day!

We are both extremely blessed to have such wonderful moms.
My mom is my biggest cheerleader and supporter. She tells me constantly how proud she is of me, even when I'm not doing anything special. She will give me advice only when I ask for it, and she is a wonderful role model. For many years of her life she put myself and my 2 sisters as her top priority over herself. She is a very selfless woman. I miss her being so close and can't wait for her to move back to NC. hint, hint I love you and so do Scott, Coby, and Trixy:)

Scott's mom is a strong and tough lady. She works very hard but always put her family first. If you need anything his mom will be there to help. She loves her family. We love you!

Skyline Run

As I mentioned in a previous post Scott and I ran our second race together in Uptown Charlotte. The week leading up to the race was my schools spring break. We were spoiled with sleeping in all week, but Saturday our morning started with an early wake up at 5:15.

Since we had to get up so early I laid everything out the night before.

After the race they had local vendors set up and a live band. The weather was
beautiful so we decided to hang out for a little while.

This race was my PR. I ran it in 26:56. Avg. 8:40 pace. Since my first 5k 5 months ago I have been able to shave close to 3 mins. off my time. It must have been the yogurt the night before:)

Spring Break

This is a quick recap of my spring break this past week.

Monday- We ate lunch at Richard Childress Vineyards and then did a wine tasting. Then headed over to Dick's to get Scott some new running shorts:) Don't worry he made sure to buy the long length running shorts. He couldn't bear to wear anything to show off his legs.



Tuesday- We went to Birkdale for the day. While in Huntersville we stopped by Blacklion and I stocked up on some more of my favorite candles. Whit introduced me to these candles, and I won't go back to Yankee candles after burning these.
I made a delicious pasta dinner. Whole Wheat tortellini with spinach, onions, sundried tomatoes, mushrooms, garlic, pasta sauce, and shaved parmesan. So easy and delicious! Since it was spring break after all we opened a bottle of sparkling wine that had been chilling in the fridge for a while.

Wednesday- Scott took me to go buy a new sewing machine once he got home from work. With my orders on headbands I need something to sew with. I have been using my mom's old machine which I found out was 27 years old. I think Scott just got tired of hearing my curse everytime I tried sewing.

Thursday- I went to cycle class with new clip ins for the first time. I have really wanted a pair of shoes for cycling, but never wanted to pay over $100 for shoes I don't wear very often. Scott found some shoes at Bike Line marked down to $50! They were a perfect fit. Yay! I really noticed a difference and felt like I was getting a better workout.

Friday- The weather was beautiful so we went to Morrow Mountain in Alblemarle. We had a run the next day so we didn't want to get into anything too strenuous. We did shorter easy hikes, but the views were still just as beautiful. Highlight of the hike was my Dirty Dancing moment:) After the hike we sat outside and snacked out Pirates Booty and sipped on a cold refreshing beer.
Then we meet Scott's parents for our pre run dinner at our favorite mexican restaurant. Then headed over to the Yogurt Lab for a sweet treat.
I wore my spi belt for hiking and Scott said it was a fanny pack.
hahaha. He has a spi belt too, so really he can't make fun of me.
If you run long distances or need something to keep car keys, id, phone, etc. this is a great accessory.
